Method
- Preheat oven to 350°F (175°C). Grease a 9×13 baking dish.
- In a bowl, mix almond flour, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk eggs, honey, coconut oil, and vanilla.
- Combine wet and dry mixtures. Fold in carrots, pineapple, and walnuts.
- Pour into dish and bake 35–40 minutes.
- Cool before serving (optional: top with Greek yogurt + honey glaze).
