Healthy Carrot Cake with Pineapple (Gluten-Free)

A moist, naturally sweet carrot cake made with almond flour, pineapple, and honey. Gluten-free and wholesome.

Ingredients
  

  • 2 cups almond flour
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp salt
  • 3 large eggs
  • cup honey or maple syrup
  • ¼ cup coconut oil melted
  • 1 tsp vanilla extract
  • 2 cups grated carrots
  • 1 cup crushed pineapple drained
  • ½ cup chopped walnuts optional

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9×13 baking dish.
  2. In a bowl, mix almond flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk eggs, honey, coconut oil, and vanilla.
  4. Combine wet and dry mixtures. Fold in carrots, pineapple, and walnuts.
  5. Pour into dish and bake 35–40 minutes.
  6. Cool before serving (optional: top with Greek yogurt + honey glaze).
