Cajun Red Beans and Rice

A quick, flavorful Cajun-style dish made with sautéed onion, bell pepper, garlic, ginger, and a homemade spice blend simmered together with jasmine rice and red beans. A warm, hearty one-pot meal with bold Southern-inspired flavor. Submitted by Rebecca White.

  • 1 Tbl spoon coconut/olive oil
  • 1 cup Jasmine rice
  • 1 Tb Cajun spice (see recipe below)
  • 1 tsp garlic salt
  • ½ diced yellow onion
  • 1 diced colored bell pepper or other peppers
  • 1 garlic clove (minced)
  • 2 ” or 1 tsp ginger
  • 2 cups broth
  • 1 can red bean rinsed and drained
  • Cajun Spice mix
  • 3 T paprika
  • 2 T garlic powder
  • 1.5 T onion powder
  • 1.5 T dried Thyme
  • 1.5 T dried oregano
  • 2 t black pepper
  • 2 t cayenne pepper
  1. Sauté oil onion and garlic for 3 minutes then add pepper until soft (additional 3-5 minutes).
  2. Add spices and stir, sauté 1 more minute, stirring constantly.
  3. Add remaining ingredients and bring to a boil.
  4. Reduce heat to simmer for 10-15 minutes (until rice is soft).
