Cajun Red Beans and Rice
A quick, flavorful Cajun-style dish made with sautéed onion, bell pepper, garlic, ginger, and a homemade spice blend simmered together with jasmine rice and red beans. A warm, hearty one-pot meal with bold Southern-inspired flavor. Submitted by Rebecca White.
- 1 Tbl spoon coconut/olive oil
- 1 cup Jasmine rice
- 1 Tb Cajun spice (see recipe below)
- 1 tsp garlic salt
- ½ diced yellow onion
- 1 diced colored bell pepper or other peppers
- 1 garlic clove (minced)
- 2 ” or 1 tsp ginger
- 2 cups broth
- 1 can red bean rinsed and drained
- Cajun Spice mix
- 3 T paprika
- 2 T garlic powder
- 1.5 T onion powder
- 1.5 T dried Thyme
- 1.5 T dried oregano
- 2 t black pepper
- 2 t cayenne pepper
- Sauté oil onion and garlic for 3 minutes then add pepper until soft (additional 3-5 minutes).
- Add spices and stir, sauté 1 more minute, stirring constantly.
- Add remaining ingredients and bring to a boil.
- Reduce heat to simmer for 10-15 minutes (until rice is soft).
