Beef & Brussels Sprout Stir-Fry with Cauliflower Rice

Ingredients
  

  • 1 lb lean beef strips or venison
  • 3 cups Brussels sprouts halved
  • 1 red bell pepper sliced
  • 1 small onion sliced
  • 2 cups cauliflower rice
  • 3 tbsp soy sauce or tamari
  • 2 tbsp olive oil
  • 1 tsp garlic minced
  • 1 tsp fresh ginger grated

Method
 

  1. Heat 1 tbsp oil in skillet; cook beef strips until browned. Remove.
  2. In same skillet, add Brussels sprouts, onion, pepper, garlic, and ginger; sauté 5–6 minutes.
  3. Stir beef back in and add soy sauce. Cook 2 minutes.
  4. In a separate pan, warm cauliflower rice in 1 tbsp oil.
  5. Serve stir-fry over cauliflower rice.
